On Monday Andrea and I decided we were going to try something new, jambalaya. We were told it was easy to make, well I felt like I was lied too. At one point I definitely thought I would be in the corner in the fetal position crying. Everything was going smoothly until I had to brown the chicken in 2 TBS of oil. First off we should have purchased a dutch oven like it said but we figured his pot would be big enough... we were wrong. Back to the chicken and the oil though. I mean I had oil flying everywhere, the ceiling, the floor, the stove and on me. I eventually chicken out and yell for Andrew to come help and like the gentleman he his, he does. Once he stepped in to deal with the browning of things it went a lot easier. I hate feeling rushed when it comes to being in the kitchen and I for sure felt that way on Monday. Next time we make this and we totally will, I will give us more time.

Tips
- make sure you boil rice long enough
- you definitely need a 9qt pot/dutch oven (at least I think so)
- have a helper
- allow yourself time
- and don't panic when you the hot oil pops all over you (like I did)
